Pickled mussels

serves 2 as a starter or nibble


500g fresh mussels
2 small carrots, peeled and chopped
1/2 red onion, peeled and diced
1 stalk of celery, diced
pinch of saffron
100ml white wine vinegar
100ml white wine, plus 50ml for cooking mussels
100ml virgin olive oil
light olive oil for cooking
