Nathan’s Lobster risotto with orange, basil and spring onion

ingredients:

Meat from 1 medium lobster cut into small pieces
300g aged Carnaroli risotto rice
3 medium banana shallots, finely chopped
1 clove of garlic, finely chopped
80g unsalted butter (20g at start)
800ml – 1litre vegetable stock
50g parmesan, grated
2 spring onion, finely sliced
1 orange, segmented and cut into small pieces
10 fresh basil leaves, sliced
