Smoked haddock and celeriac soup, lemon and garlic dressing

serves 4 as a lunch main course
ingredients:

For the soup

1 side of smoked haddock
1 celeriac
1 sprig of thyme
10 peppercorns
500ml full fat milk

For the dressing
zest of 1 lemon
1 clove of garlic, peeled and roughly chopped
200ml extra virgin olive oil
pinch of salt
