Band of Outlaw’s – Tim Barnes
This month we caught up with Tim. We asked him those ten questions…
1 – What do you do?
Head Chef at Outlaw’s Fish Kitchen.
2 – How long have you been an Outlaw for?
Nearly eight and a half years
3 – What do you do in your spare time?
I spend lots of time with my family. My parents moved to Bude shortly after I started working for Nathan – it’s great to have them so close by. If I’m not eating out, you’ll probably find me on the golf course.
4 – Can you remember your first day?
I can! I had no idea what I was letting myself in for as I walked up the hill to the restaurants, in Rock at the time. A friend of mine working for Nathan convinced me to come down from Huddersfield to work for the summer – It couldn’t have been too bad as I never went back home!
5 – Tell us the best dish you have ever eaten (either at Nathan Outlaw or anywhere else)?
Mum’s bacon sandwiches.
6 – What is your favourite drink?
Whiskey, whether it be a fine scotch malt or a new world Japanese.
7 – What music do you like and who is your favourite artist?
I have an eclectic taste in music, but in the kitchen you’ll find me mostly listening to indie and early 00’s alternative, like Taking Back Sunday and My Chemical Romance, but my favourite is Linkin Park.
8 – Who would you invite to dinner?
Howard Marks (would have good dinner chat!) and Tiger Woods (just because…)
9 – What’s your favourite ingredient?
Chilli is something I love and often work with on the menu.
10 – If you could eat anywhere in the world, where would it be?
I’ve always wanted to go to India. Their use of flavours and spices amazes me.
