Everyone has time for British strawberries! Make the most of them while they last. This recipe is part of the Time For Fish – Summer Picnic
600g fresh strawberries (hulled)
200g caster sugar
150ml floral wine (riesling)
6 fresh mint leaves
6 fresh basil leaves
fresh mint and basil sprigs
250g clotted cream
Halve all of the strawberries and place in a large bowl. In another bowl whisk the sugar and the wine together to dissolve the sugar. Tear the basil and mint leaves and mix with the wine. Pour the marinade over the strawberries and toss together. Leave the strawberries to marinade for 2 – 3 hours in a cool place, gently mixing them once or twice while marinading.
To serve: Place the strawberries in a fresh clean bowl and drizzle over the marinade. Finish with some mint and basil sprig. And oh…don’t forget the clotted cream!
