1 – What do you do?
Executive Chef for Nathan Outlaw Restaurants.
2 – How long have you been an Outlaw for?
I worked with Nathan from 2002-2005, then joined back with the company as Head Chef when Nathan opened Outlaw’s in Rock in 2009.
3 – What do you do in your spare time?
Slippers and cardigan.
4 – Can you remember your first day?
Easter Sunday 2009. We had no chefs, and a full restaurant. Still standing to tell the tale.
5 – Tell us the best dish you have ever eaten (either at Nathan Outlaw or anywhere else)?
A crab, cabbage and egg stir fry dish I ate at a street food vendor in Bangkok.
6 – What is your favourite drink?
Tea – Tetley’s
7 – What music do you like and who is your favourite artist?

9 – What’s your favourite ingredient?
Any fresh seafood
10 – If you could eat anywhere in the world, where would it be?
Tokyo – I’d love to experience the sashimi and sushi sometime.
