This month we caught up with Zack to find out just what makes him tick! We asked him those ten questions…
1 – What do you do?
Head chef at The Mariners in Rock.
2 – How long have you been an Outlaw for?
This will be my fifth summer at The Mariners.
3 – What do you do in your spare time?
Surf, walk my dog and catch up with friends, mostly.
4 – Can you remember your first day?
Yeah, the pub had been open for about a week, so everybody was just finding their feet, it was a completely different place to what it is now.
5 – Tell us the best dish you have ever eaten (either at Nathan Outlaw or anywhere else)?
Braised octopus and garlic prawns on the beach at Pria Adraga in Portugal, just simple and really tasty.
6 – What is your favourite drink?
At the minute, caipirinha, one of my chefs brought a bottle of cachaca back from Brazil, it’s so good.
7 – What music do you like and who is your favourite artist?
I like a mix of a lot of music, mainly rock, hip hop and punk, mainly the old stuff, I couldn’t pick a favourite.
8 – Who would you invite to dinner?
Probably just all my mates, they’re kinda spread out over England and the world now, so would be good to get them all together.
9 – What’s your favourite ingredient?
I like St Enodoc asparagus, it’s just around the corner from The Mariners and I love the fact that I get a text saying that it’s ready and then 5-6 weeks later it’s gone for another year.
10 – If you could eat anywhere in the world, where would it be?
I still need to check out Tom’s place ‘Cornerstone’ in Hackney Wick, the food looks amazing and I know Tom will be pushing it up there. (Tom Brown was head chef at Outlaw’s at The Capital).
